What is Sodium Benzoate?

Sodium benzoate also known as benzoate of soda is a sodium salt of benzoic acid. [1]

Health Effects

In combination with ascorbic acid (vitamin C, E300), sodium benzoate and potassium benzoate may form benzene, a known carcinogen. Heat, light and shelf life can affect the rate at which benzene is formed. [1]

Several studies have linked consumption of cured meat and nitrite by children, pregnant women, and adults with various types of cancer. [2]
